Cinco de Mayo and Citronella

It’s Cinco de Mayo! In honor of all of your outdoor parties, it’s time to focus on Citronella Nights. These candles are, without a doubt, the best smelling citronella candles on the market – mainly because they don’t smell like citronella! They come in two fantastic fragrances: Jasmine Lime and Papaya Passion. They're poured into a wide square jar, are double-wicked, and are poured to a lower level to avoid gusts of wind. And now they come in tealights! These are perfect for your patio parties, or scatter the tealights around your pool area for ambiance in addition to a bug-free zone. You may be tempted to burn these candles inside your home, but resist. They really do contain citronella, even though they don’t smell like it!

Interested in other tropical smells? Check out the following: Casaba Melon Sunset, Coconut Lime Verbena, Coconut Mango Breeze, and Pineapple Coast.

Need some ideas for your own Cinco de Mayo party? Here are the best recipes ever for Margaritas and Enchiladas.

Tin Can Margaritas – My sister-in-law Rachel introduced this recipe to me. Watch out when you drink this one. It’ll knock your socks off!

Pour 1 can frozen limeade (thawed) into a pitcher. Fill the can with Tequila and pour it in. Fill the can half-way with Triple Sec and fill the other half with lemon juice and pour it in. Mix well and serve in salt/sugar-rimmed glass over ice. Garnish with lime wedge.

Enchiladas – This is my mother-in-law Beverly’s recipe, and you will never have better enchiladas. It may be long and involved, but it’s really worth it! The different parts can be made in advance and put together the day of your party.

Heat oven to 350*

Tortillas:
1 c. all-purpose flour
½ c. yellow corn meal
½ teaspoon salt
1 2/3 c. milk
1 egg
2 teaspoons melted butter

Combine flour, cornmeal and salt in mixing bowl. Add milk and egg and melted butter. Beat until smooth. Heat skillet over medium heat. For each tortilla, pour 3 tablespoons batter into skillet. Immediately rotate pan to spread the batter. Cook until light brown; turn and brown on other side. Stack between waxed paper until ready to use.

Meat:
2 tablespoons butter
½ c. chopped onion
1 clove garlic, minced
1 lb. ground chuck
2 c. water
1 teaspoon oregano
½ teaspoon salt
1/8 teaspoon cumin

Melt butter in skillet; sauté onion and garlic. Add meat and brown. Drain off excess fat. Add water, oregano, salt & cumin. Simmer until liquid is almost evaporated (about 45 minutes).

Sauce:
2 tablespoons butter
½ c. chopped onion
1 can crushed tomatoes (1 lb., 12 oz.)
1 can condensed tomato soup (10 ¾ oz.)
1 can tomato sauce (8 oz.)
2 tablespoons chili powder
1 cinnamon stick
2 whole cloves
1 teaspoon salt
1 teaspoon sugar
¼ c. butter

Melt butter in skillet; sauté onion. Add crushed tomatoes, tomato soup & sauce, chili powder, cinnamon, cloves and salt. Simmer, stirring occasionally, until reduced by 1/3 (approx. 45 minutes). Strain. Add sugar and butter. Stir until butter melts. Remove cinnamon stick.

Additional enchilada ingredients:
2 c. shredded cheddar cheese
1 c. chopped Spanish onion
black olives
parsley

To assemble enchiladas:
Divide the meat, 1 c. shredded cheese, and chopped onions among the 12 tortillas; roll. Place in buttered 13x9 pan. Pour tomato sauce over. Bake 15 minutes or until heated through. Top with remaining cheese and bake until melted (approx. 5 minutes). Garnish with olives and parsley.

Spirited Summer is Here!

Are you ready to have a Spirited Summer? The new Summer catalog is here, and it's fantastic! Here are my top three picks:

Baking Line Lemon Bar candle: It’s back! This is my VERY FAVORITE Gold Canyon candle EVER!!! It’s that great lemony scent, with a little hint of sweetness, and it’s only sold in our summer catalog. I’m stocking up this time around so that I’m never without it!

Star-Spangled Votives: They’re adorable and they have a great retro feel to them. And what a great value -- you get all three! They’ll definitely be decorating my table this holiday!

Pod Warmers: They’ve been redesigned with a timer so that you can set the warmer to be enjoyed for four, eight or twelve hours at a time. And there are new styles and an expanded line of pod scents. These aren’t available until June 1st and I can’t wait to get mine!

Focus on Eco-Shopper: Eco-Fabulous!

It’s Earth Day, and I’m celebrating the fabulous Eco-Shopper. It’s big, it’s sturdy, and it’s attractive. LOVE the color and the adorable flowers. These bags stand out in a crowd! They’re great for grocery shopping, but I use them for all kinds of stuff. They’re roomy enough to hold all of your beach and picnic accessories, they hold up well under pressure when I head out to the farmer’s market, and I recently loaded one up to take to my mother-in-law’s house for a big-time birthday bash, and everything I needed fitted into one!!! You’ll want more than one, though, so that you can shop with Eco-Fabulous flair!

My Top Five Faves That Are Going Away

1. Marshmallow Confections. It's adorable and it smells great. It's spun sugar and fruity lemon, all rolled into one, and it has an adorable chick hang tag. I loved it so much, I burned through mine in one week.

2. Daisy. It's perfect for spring, with a combination of different flowers providing the base. And it comes in a great jam jar.

3. Brazilian Rainforest Vanilla. The scent is complex and soft at the same time. Mine just burned on and on. And it's great to burn with a Ginger Lime tealight. What a combination!

4. Orange Blossoms: My mom says it smells EXACTLY like the bush that was planted in back of the house where she grew up. They would open the dining room window and let the breeze bring the fragrance all through the house. If you aren't lucky enough to have one of these bushes in your back yard, Gold Canyon can still fill your home with this scent.

5. Hobnail Easter Basket. If you decorate with yellows, it can be for any time of year. I filled mine with jelly beans. It's just adorable!

Discontinued Scents

Just wanted to let you know which frangrances are disappearing after our Inspired Spring catalog ends on April 30th. Gold Canyon has not told us if they are going away until next Spring, or if they are going away for good, so get 'em while you can! See the sidebar for the link to my website to place your order.

Specialty: Jelly Bean, Marshmallow Confection, Sinful Strawberry Truffle, Destination Vanillas
Candles for Kids: Spun Sugar, Very Berry Blast
Fruits & Citrus: Black Cherry, Orange Mango, Orange Vanilla, Strawberry Kiwi
Buds & Blossoms: Orange Blossoms (my mom's FAVORITE), Sunflower
Baking Line: Creme Brulee, Sweet Cinnaroll

Summer Catalog Preview

May brings flowers and sunshine and our Fantastic Summer 2009 catalog. I'm giving you a sneak peak of SPIRITED SUMMER 2009. Enjoy!

Baked Pineapple

Easter is this Sunday, and I thought I would post my favorite recipe for this time of year: Baked Pineapple. It's SO easy!

1 c. sugar
1/2 c. butter or margarine
1 large can crushed pineapple, well drained
2 eggs
5 slices bread, cubed

Cream together sugar and butter. Add eggs and pineapple. Fold in bread. Bake at 350* for 1 hour.

If you love this recipe, you'll love our Pineapple Cilantro pillar, or Pineapple Coast votives.

Recycle and Reuse

Your candle jars can be used again!!! When you have 1/2" or less of wax in the jar, place it on a baking sheet in a 200 degree oven for approximately 30 minutes, or until the wax is liquified (jar will be HOT). Pour it into a disposable container that is heat safe. If the wicks still cling to the bottom, take a spoon and pull them out. Wipe out remaining wax with a paper towel. You can wipe the inside of the jar with wax remover, though it isn't necessary. Place on the top rack of the dishwasher and run them through with your other dishes. They can hold all kinds of things!

Here are a few ideas:
Flowers
Paper clips
Buttons
Rubber bands
Cotton balls
Pens and pencils
Cotton swabs
Candy
Tealights
Loose change
Tea bags
Beads
